		<description>Onion soup is absolutely one of my favorites too!  I totally agree that a variety of onions give the best flavor.  I also like to use a variety of cheeses...the gruyere is good ... I also like a smoked gruyere, some swiss or provolone to make the perfect stringness and maybe even a little sprinkling of Parmesan...just depends on what I have in the frig.  Of course I LOVE cheese!!</description>
