		<description>Thanks so much for posting this recipe. I tried Am Test Kitchen but they required membership. I cooked a buterflied turkey earlier this year and it was quick,  moist and delicious so I have decided tocook it again for Thanksgiving. I would suggest this cooking method to everyone.</description>

		<description>I wish I could take credit for it. The idea is that if you flatten the turkey then all the meat will cook at the same time. My butcher sells lots of &quot;Flattened Chickens&quot; as well. The breast is bigger and the thigh takes longer so if they are all at the same height, you should end up with juicy but cooked thigh and breast meat instead of the usual cooked thigh and dry breast. In the Test Kitchen video she even takes a rubber mallet to the breasts to bring them down to the height of the thighs. I was lucky, a few good hammer fists with my hand did the trick (cover the turkey with plastic wrap first)</description>
