It sounds like a delicious dish! I have found love for chicken again too this year. It all changed when I tried an organic chicken. It changed everything. I hadn't cooked chicken for several years before this. I am also a big fan of legs and thighs, instead of the breasts.

This looks great. Usually I am afraid of anything that is "diavola" because I worry it will be too spicy for me, but this seems like it has a small amount of chili flakes. I almost always use only breasts because no one in the family likes dark meat. I know what you mean about the difference in flavor though.

Gosh, does that look good -- and I'm definitely with you on using the whole bird, and the flavors here look just extraordinary. Totally worth all those smoke alarms, if you ask me.

This looks wonderful! You're photos make me want to eat it, no complaints about that. I use chicken breasts a lot because my daughter likes it and it just seemed to be easier. Then I tended to go for roasting whole chickens because of the ease. I agree it's worth using the whole bird. I'm trying this recipe!
