Beef, Tataki-Style, with Mentsuyu Sauce

MENTSUYU DRESSING/DIPPING SAUCE
Ingredients:
1 cup soy sauce
1/2 cup mirin
3 tbsp superfine or fruit sugar
1 cup water
2-1/2 tbsp dried bonito flakes or other fish flakes
Directions:
Mix all ingredients together in a microwave-safe bowl. Do not cover. Microwave at medium power for 3 minutes. Cool and strain. You can refrigerate it until you need it.

Pollo Alla Diavola (Devil’s Chicken)

POLLO ALLA DIAVOLA (Devil’s Chicken)
Serves 4.
Ingredients:
2/3 cup olive oil
2 tbsp lemon juice
1/2 tsp dried chili flakes
4 sage leaves, coarsely chopped
salt and pepper
one 3-4 pound chicken, butterflied
2 shallots
4-5 cloves of garlic
6 tbsp chopped parsley
2-1/2 tbsp butter, softened to room temperature
